Something shifts this time of year, doesn’t it? The days stretch longer, the sun shines a little brighter, and suddenly, that cozy winter comfort food just doesn’t hit the same. It’s like nature itself is nudging us toward a reset—birds are singing, trees are budding, and even my taste buds seem to wake up from hibernation.


(Anyone else completely over soup and craving something fresh and crunchy?)

As a National Board Certified Health & Wellness Coach, I hear this from my clients every spring: Winter meals were great, but I need a reset! I want meals that feel light, fresh, and energizing.

If you’re feeling the same way, now is the perfect time to swap out heavy winter dishes for vibrant spring superfoods. And the best part? These nutrient-packed foods are actually in season! (Because let’s be real—no one’s growing fresh mangoes in Minnesota, no matter how much we wish they were.)

✔ Toss with olive oil and roast until tender

✔ Grill it—bonus points if you eat it outside, pretending it’s warm.

After months of hearty winter meals, our bodies crave greens—real greens, not the sad, wilted lettuce in the back of the fridge.

Packed with iron, calcium, and antioxidants, leafy greens support detoxification, boost energy, and keep digestion running smoothly.


Try this:

✔ Blend into a smoothie.

✔ Toss into a salad.

✔ Sauté with garlic and olive oil (it takes 3 minutes, I promise).


Spring Salad to Try: Arugula Pear Salad with Pecans


Dressing:

  • ¼ cup extra virgin olive oil

  • 2 tsp Dijon mustard

  • 2 tsp honey

  • 1 tsp balsamic vinegar


Salad:

  • 5 oz arugula

  • 2 pears, diced

  • 2 cups pecans (halves or chopped)


Instructions:

1.    Add arugula to a bowl. Top with pecans and diced pears.

2.    In a small bowl, whisk together olive oil, Dijon mustard, honey, and balsamic vinegar.

3.    Pour over the salad and toss gently. Add salt and pepper to taste.

That peppery bite of arugula with the sweetness of pears? Chef’s kiss!

Mint Kombucha Fizz (Mojito Mocktail)

Serves 2


Ingredients:

  • 6-8 fresh mint leaves per glass

  • ½ lime, sliced

  • 1 cup kombucha (I love GT’s Organic & Raw Original)

  • 1 cup coconut water (plain, no sugar added)

  • 2-3 cucumber slices (organic preferred)

  • Ice


Instructions:

1.    Divide mint and lime slices between two fancy glasses (because mocktails deserve good glassware).

2.    Muddle to release the juice and aroma.

3.    Add ice, pour in ½ cup kombucha per glass, and top with coconut water.

4.    Stir gently and garnish with cucumber slices.
