Hi! I’m Lori. I’m a Certified Integrative Health Coach and Wellness Educator, and a graduate of the Institute for Integrative Nutrition. I have BS degrees in Psychology and Business from Saint Cloud State University. I am also a Reiki Master and 200-Hour Certified Yoga Instructor.  

 

I created Mindful Health in 2015, providing services as a Health Coach and Wellness Educator in Rosemount, Minnesota. I work primarily with women over 40, teaching the principles of clean eating and self-care for increased health, happiness, and productivity. I present a variety of wellness workshops to corporations and organizations. I love supporting women with behavior change, clean eating and thought change, one small step at a time. 

While healthy eating is important, optimum health isn’t just about food. From my own experience, creating a healthier mind and body begins by creating a happier, more relaxed life. This includes time with our "Primary Foods" (the "foods" that fuel us, but don’t come on a plate - relationships, career, spirituality and physical activity). For me, being healthy isn’t about wearing a size two or running a half marathon. It is about how good one feels, and making “healthy” a way of life and not a temporary diet. 

 

From my childhood until my early 40’s, I was eating the Standard American Diet (SAD). For me, this included sugary cereal with two diet colas for breakfast, fast food lunches, and greasy food for dinner. I bought whatever looked good at the grocery store… frozen pizza, chips, and countless other foods devoid of nutrition. I also ate at restaurants far too often. I wish I had known earlier that what we eat can change our lives!

  

In the summer of 2012, I was in a bicycle accident and my life changed forever. I sustained a Traumatic Brain Injury and was unable to return to work as a National Account Executive at Meet Minneapolis Convention and Visitors Association. Two years of occupational therapy, physical therapy, and speech therapy led to minimal progress. My doctors explained that my condition would not improve further, and that I would never again be able to work in a fast-paced career. I was still having daily headaches and felt fatigued, depressed, and anxious. I knew I had to do things differently!

I started to work with a health coach to guide me to live a healthier life. I began changing the way I ate and the way I thought, and started to practice yoga and meditation. My headaches became milder, and I was able to concentrate and focus much better. At the same time, I lost weight and began to have more energy. I took cooking lessons and learned to cook with fresh, whole foods. I stopped buying frozen, processed meals. I read one health book after another, watched health documentaries, and researched foods that provide healing and energy. I completely changed my lifestyle. I practiced self-care every day, ate high-nutrient food, and made sure I didn’t over-schedule. I listened to my body’s messages with open ears and an open heart.

 

I asked myself, “Why doesn’t everyone know how simple it is to feel so much better in our daily lives?” I felt a strong need to spread the word that we all have the ability to lead happier and healthier lives.

I took a big leap of faith and enrolled at the Institute of Integrative Nutrition. I completed an intensive year-long health coach training program and launched my coaching practice. My learning continues, so that I can help you implement the most effective food and lifestyle changes into your daily routine.

 

No one method works for everyone. We are all unique. I will guide you in taking the steps that best support your personal health and happiness. Together, we will focus on making gradual, lifelong changes that enable you to live a happy, healthy life.
